Celem niniejszej pracy było zbadanie wpływu dodatku: wody destylowanej, wina białego, wina białego z dodatkiem kwasu galusowego, 1M roztworu NaOH, 1M roztworu HCl oraz przeprowadzenie fermentacji jabłkowo-mlekowej na parametry intensywności (I) i odcienia (T) barwy wybranych win czerwonych. Parametry barwy określono korzystając ze spektrofotometrycznych oznaczeń badanych próbek win przy długościach 420 nm, 520 nm, 620 nm. W pracy wykazano, Ŝe intensywność i odcieńzależną od rodzaju badanego wina. Dodatek wody do wina nie powoduje znaczących zmian w pH, ale znacząco wpływa na parametry barwy.
