The aim of this study was to investigate the mechanism of formation of free radicals in starches and flours of different botanical origin. Four kinds of starches and flours: wheat, corn, potato and tapioca, were analyzed with atomic absorption spectroscopy and electron paramagnetic resonance methods. It was found that during thermal treatment, two types of stable radicals localized at C1 and C6 carbon atoms of glucose units were created in starch. The number and structure of radicals found in untreated ant treated mechanically or thermally samples of flours were dependent on their botanical origin.
