Horizons, chaînes et rivages frigorifiques en France, 1900-1930.: Marchés alimentaires, modernités techniques et pêches industrielles

International audienceThe article analyses the implementation of two refrigeration systems in France in the first third of the 20th century. The first system supplied Argentinian meat to the Allied armies of the First World War. The second system, both halieutic and civil, was grafted onto the first one as part of the post-warindustrial modernization of France. It includes, among other things, a refrigeration line for the exploitation of cod fish between Saint-Pierre-et-Miquelonand Lorient. This line, which was under a mixed public-private administration, came to an economic failure at the end of the 1920s due to consumerresistance. Industrial modernity can thus be characterised, in the case of food refrigeration, by the concepts of systematisation and boarding of nature.L’article analyse la mise en place de deux systèmes frigorifiques en France entre 1900 et 1930. Le premier système ravitaille en viande argentine les armées alliées de la Première Guerre mondiale. Le deuxième système, halieutique et civil, se greffe sur le premier dans le cadre de la modernisation industrielle de la France après-guerre. Il comprend, entre autres, une ligne du froid pour l’exploitation de la morue entre Saint-Pierre-et-Miquelon et Lorient. Cette ligne, sous administration mixte public-privé, connaît un échec économique à la fin des années 1920 dû à la résistance des consommateurs. La modernité industrielle peut ainsi être caractérisée, dans le cas du frigorifique alimentaire, par les concepts de systématisation et d’arraisonnement de la nature
