Bu çalışmada Türkiye'de yetişen ve sıkça tüketilen rokanın mikrobiyal yükünün azalmasına ve kalite özellikleri üzerine farklı dezenfektanların etkisi araştırılmıştır. Bu amaçla, yıkama işlemlerinde çeşme suyu ve üç farklı serbest klor konsantarsyonu (25, 50 ve 75 ppm) içeren sodyum hipoklorit ve EYS çözeltileri ile aynı konsantrasonlarda (25, 50 ve 75 ppm) hidrojen peroksit ile yıkama işlemleri uygulanmıştır. Her dört işlemde de (çeşme suyu, sodyum hipoklorid, EYS ve hidrojen peroksit) üç farklı zaman diliminde (1, 3 ve 5 dk) yıkama işlemi uygulanmıştır.
