Effect of drying methods on total phenolic content and antioxidant activity of rosemary, basil, thyme, peppermint and stevia

Biberiye (Rosmarinus officinalis), fesleğen (Ocimum basilicum), kekik (Thymus vulgaris), nane (Mentha piperita) ve stevya (Stevia rebaudiana Bertoni) içeriklerinde bulunan fenolik bileşikler nedeniyle antihipertansif, hipoglisemik, antimikrobiyal, ve antioksidan özelliklere sahiptir. Antioksidan ve antimikrobiyal özellikleri, gıda endüstrisinde doğal koruyucu maddeler olarak kullanılmasını sağlamaktadır. Bu çalışmada, farklı kurutma yöntemlerinin (mikrodalga fırında, kurutma tünelinde, gölgede, güneşte, buzdolabında) biberiye, fesleğen, kekik, nane ve stevyanın fiziksel (nem miktarı, renk) ve fonksiyonel özellikleri (antioksidan aktivite, toplam fenolik madde) üzerine etkileri belirlenmiştir. Örneklerin toplam fenolik madde miktarı Folin-Ciocalteu, toplam antioksidan aktivite değeri ise DPPH yöntemi ile belirlenmiştir. En yüksek toplam fenolik madde miktarı biberiye ve fesleğende mikrodalga fırında (800 W), kekikte kurutma tünelinde (30 °C), nanede güneşte, stevyada gölgede kurutulmuş örneklerde saptanmıştır. En yüksek antioksidan aktivite değeri biberiye ve fesleğende mikrodalga fırında (700 W ve 800 W), kekikte kurutma tünelinde (30 °C), nanede mikrodalga fırında (600 W, 700 W, 800 W) ve güneşte, stevyada ise güneşte ve gölgede kurutulmuş örneklerde tespit edilmiştir. Biberiye, fesleğen, kekik, nane ve stevyanın antioksidan aktivite değeri ve toplam fenolik madde miktarlarının farklı kurutma yöntemlerine göre değişiklik gösterdiği saptanmıştır.Rosemary (Rosmarinus officinalis), thyme (Thymus vulgaris), basil (Ocimum basilicum), mint (Mentha piperita) and stevia (Stevia rebaudiana Bertoni) have antihypertensive, hypoglycemic, antimicrobial and antioxidant properties due to their phenolic compound contents. Their antimicrobial and antioxidant properties make them used as preservative substances in the food industry. In this study; detections have been made for determining the effects of different drying methods (at microwave oven, at drying tunnel, in the shade, in the sun, at refrigerator) on rosemary, basil, thyme, mint and stevia and their physical (moisture content, color) and functional properties (antioxidant activity, total phenolic content). Total phenolic content detection has been determined by Folin-Ciocalteu method and total antioxidant material activity value has been determined by DPPH method. As a result of drying methods, total phenolic content have been detected maximum for rosemary and basil; at microwave oven (700 W and 800 W), for thyme; at drying tunnel (30 °C), for mint; at microwave oven (600 W, 700 W and 800 W) and under the sun, for stevia; under the sun and in the shade.
