Diseño de una Ruta Turística Gastronómica del Cantón Salcedo Parroquia Mulalillo para la Contribución a la Valoración del Patrimonio Cultural Inmaterial

The present investigation proposes: to design a gastronomic tourist route of the Mulalillo parish, canton Salcedo, province of Cotopaxi to contribute to the valorization of the intangible cultural heritage; preparing an inventory of the intangible heritage in the parish's gastronomic sub-sector, systematizing it in the registration forms of the INPC instructive "National Inventory of Cultural Heritage" having as its first objective the gastronomic diagnosis of the Parish. In the second objective we will proceed to inventory the gastronomy resulting in a total of thirty-four dishes, of which twelve are fast food, which equal a percentage of 35% and twenty-two to typical plates which corresponds to 65%. we valued the state of vulnerability of each typical dish and as a final objective, a georeferenced map of the route was produced and the design in which it was established was defined as eighteen stops. Each of the sale locations had a distance of 10 km 578m and a duration of 5 hours 10 minutes.La presente investigación propone; diseñar una ruta turística gastronómica de la parroquia Mulalillo, cantón Salcedo, provincia de Cotopaxi para contribuir a la valorización del patrimonio cultural inmaterial; elaborando un inventario del patrimonio inmaterial en el sub ámbito gastronómico en la parroquia, sistematizándose en las fichas técnicas de registro del instructivo INPC “Inventario Nacional del Patrimonio Cultural” teniendo como primer objetivo el diagnostico gastronómico de la Parroquia; Como segundo objetivo se procederá a inventariar la gastronomía teniendo como resultado un total de treinta y cuatro platos, de los cuales doce pertenecen a comida rápida con un porcentaje de 35% y veinte y dos a gastronomía típica correspondiente al 65% a la vez se valorizo el estado de vulnerabilidad de cada plato típico; como objetivo final se elaboró un mapa georreferenciado de la ruta, se definió el diseño en el cual se estableció dieciocho paradas en los lugares de venta de cada plato con una distancia de 10 km 578m y una duración de 5 horas 10 minuto
