Guía descriptiva del Patrimonio Inmaterial en el Ámbito 4 Subámbito Gastronómico de la Comunidad de Quinticusig

The research focuses on the gastronomy that the Quinticusig community has as it is divided over the years, has lost the essence of its traditions, beliefs, the way of behaving within a social group, and even its knowledge in regarding the ancestral process of food. This occurs because there is a determining factor that is the globalization within it is the new technological trends and this has become an influential part of the loss of identity, thus adopting new customs alien to yours. The project contains the situational diagnosis of the Quinticusig community, the main methods and techniques used were the literature review, field trips and interviews, this served to identify the key actors, the same ones who helped the information regarding the aspects geographic-environmental; considering the location, the limits, the weather state, the temperature; sociocultural aspect the dress and the parties are established, finally, within the socio-economic aspect, the transportation, infrastructure education, jobs and jobs are detailed, among other aspects. In addition, an inventory of intangible heritage was conducted in scope 4, which is based on the knowledge, techniques and processes that communities carry out in their natural environment. The dishes were classified in continuous 13, typical 4 and festive gastronomy 7. For all this, the files extracted from the INPC Instructions were applied, which contains all the guidelines to the data that was needed for the inventory, with which the salvation of the same can be established. Finally, the result of the research is the design of a descriptive gastronomic guide of the community of Quinticusig, this was possible thanks to the collaboration of the inhabitants of the community which can help with the next investigations that arise within the community and that the creation of a gastronomic route within the place is expected.La investigación se enfoca en la gastronomía que posee la comunidad de Quinticusig ya que se divisó que con el pasar de los años ha ido perdiendo la esencia de sus tradiciones, creencias, el modo de comportamiento dentro de un grupo social, e incluso su conocimiento en cuanto al proceso ancestral de la comida. Esto se da ya que existe un factor determinante que es la globalización dentro del mismo se encuentra las nuevas tendencias tecnológicas, esto se ha vuelto una parte influyente entre la pérdida de identidad, adoptando así nuevas costumbres ajenas a las suyas. El proyecto contiene el diagnóstico situacional de la comunidad de Quinticusig, los principales métodos y técnicas usados fueron: la revisión bibliográfica, salidas de campo y entrevistas, esto sirvió para identificar los actores claves los mismos que ayudaron a la obtención de información en cuanto a los aspectos: geográfico- ambiental; considerando la ubicación, los límites, el estado climático, la temperatura; aspecto socio-cultural; se establece la vestimenta y las fiestas. Finalmente dentro del aspecto socio económico se detalla el trasporte, la educación la infraestructura, los trabajos y empleos, entre otros aspectos. Además de ello se realizó un inventario del patrimonio inmaterial en el ámbito 4, el mismo que se basa en los conocimientos, técnicas y procesos que las comunidades llevan a cabo en su entorno natural. Se clasificó los platos en gastronomía continúa dando un total de 13, comida típica 4 y festiva 7 platos. Para todo ello se aplicó las fichas extraídas del Instructivo del INPC, el cual contiene todas las pautas referentes a los datos que se necesitó para el inventario, con ello se desea establecer la salvaguardia del mismo. Finalmente, el resultado de la investigación es el diseño de una Guía gastronómica descriptiva de la comunidad de Quinticusig, esto fue posible gracias a la colaboración de los habitantes de la comunidad, esperando así contribuir con las próximas investigaciones que se planteen dentro de la comunidad ya que se espera la creación de una ruta gastronómica dentro del lugar
