Estudio de la técnica de análisis de imagen de patrones láser como herramienta para evaluar la estabilidad térmica de aceites vegetales

[EN] Characteristics in terms of composition of the different edible vegetable oils are different, as well as the evolution of their stability after being heat treated. The characterization of these characteristics can be done using various techniques and in the present work, the ability of the imaging technique based on the recognition of laser dispersion patterns for the continuous characterization of the oil defrosting process has been evaluated. This technique, cheap and easy to apply, is based on involving the coherent light of a laser on the sample, so that this interacts with the matrix of the food, generating patterns of light that will be analyzed later by using descriptors and variables obtained from the pixels forming all images taken continuously. Three different oils were used for this purpose: olive oil, extra virgin olive oil and sunflower oil. All three were, in turn, analyzed after having been subjected to 3 different conditions: without heat treatment, at 80oC for 15 hours and at 80oC for 66 hours. After heat treatment, the samples were brought to freeze at -40oC and once this temperature was reached, they were analyzed with the laser pattern imaging equipment. Finally, the images were transformed into data using a software developed by the working group and through multivariate analysis. In addition, the temperature of the samples was continuously monitored while being evaluated by the imaging equipment to finally characterize and correlate both information. Results obtained have shown how the technique is able to discriminate between different types of oil and its thermal stability according to its melting process, basing its characterization on the ability of the equipment to evaluate the fusion of fats.[ES] La técnica no destructiva de imagen basada en el reconocimiento de patrones de dispersión laser generados por la interacción del láser con la muestra, ha sido estudiada con éxito tanto en la caracterización estática como dinámica de alimentos y de sus procesados. Concretamente su aplicación dinámica, es decir, en continuo para la caracterización de procesos, se ha desarrollado con éxito en la descripción del cuajado de yogures y de quesos. Dado que los aceites vegetales se ven alterados por la acción de tratamientos térmicos y que estas alteraciones influyen sobre sus características, entre ellas las relativas a su proceso de congelación / descongelación, en el presente trabajo final de grado se pretende evaluar la técnica de imagen como herramienta para caracterizar la estabilidad térmica de aceites vegetales a través del estudio del proceso de fusión de aceites congelados. Para ello se utilizarán tres aceites distintos: aceite de oliva, aceite de oliva virgen extra y aceite de girasol. Los tres serán, a su vez, analizados después de haber estado sometidos a 3 condiciones diferentes: sin tratamiento térmico, a 80ºC durante 15 horas y a 80ºC durante 66 horas. Tras el tratamiento térmico, las muestras se llevarán a congelar a -40ºC y una vez alcanzada esta temperatura se irán sacando para analizarlas con el equipo de análisis de imagen de patrones láser. Finalmente, las imágenes serán transformadas en datos mediante un software desarrollado por el grupo de trabajo y a través del análisis multivariante. Además, la temperatura de las muestras será monitorizada en continuo la vez que serán evaluadas mediante el equipo de imagen, a fin de poder finalmente caracterizar y correlacionar ambas informaciones.Lozoya Plantá, R.
