The Bachelor’s thesis deals with the composition of vegetable oils, their production and legislative requirements related to this issue. It focuses on eight selected non-traditional types of cold pressed oils - flaxseed, hemp, poppy, safflower, pumpkin,avocado, grape and sesame. It describes their fatty acid composition and the content of biologically active compounds. All selected oils are characteristic by high levels of polyunsaturated fatty acids. Polyunsaturated fatty acids have positive effect on nutrition and predetermine the use of these oils especially in cold dishes.
