The purpose of this paper,is a bibliographical review of experimental studies on fructose and glucose separation by selective adsorption in caution ion exchange resin bed. It describes the basic mechanism of this operation and analyses the characteristics and advantages of the industrial processes of fixed and moving-beds.After, it studies the optimal separation conditions for the parameters: temperature, feed concentration, feed and eluent flows and some others.Objetiva a revisão bibliográfica dos estudos experimentais sobre a separação de frutose e glicose por adsorção seletiva em leito de resina catiônica trocadora de íons.
