En Colombia, el higo (Opuntia ficus indica) se cultiva en zonas áridas y semiáridas, con fines de abastecer el mercado interno y el de exportación; no obstante, durante el cultivo y la poscosecha, se producen daños y pérdidas considerables del fruto, que hacen necesario la búsqueda de alternativas, para el aprovechamiento de los frutos, en la cadena agroin-dustrial. En el presente estudio, se llevó a cabo la extracción de la pectina del fruto de higo y se empleó en la elaboración de un dulce tradicional de piña.
