1 CD, programme PSDRNational audienceThe aim of this study was to explore the capacity of farms to adapt to both structural changes in consumer demand for beef products and recent market disruptions (i.e. mad-cow disease and foot-and-mouth crisis in winter 2000/2001). The flexibility concept, coming from the management sciences, was then mobilized to analyze the different ways of farm's adaptation. The analysis was based on 5 different surveys carried out in 14 farms, dealing with the farm history, economic/marketing, technical management, sociology, work organization.
