Addressing food insecurity: Experiential learning through entrepreneurship education in a second year Career and Technical Education setting

Food insecurity is an issue that impacts approximately eleven percent of households in the United States (Economic Research Service, 2018). According to the Food and Agriculture Organization of the United Nations (FAO) (2008), food insecurity exists when a household has inadequate access to food supply due to social or economic reasons. In addition to access, the availability, utilization and stability of food supply also impact the food security status of a household (FAO, 2008). High school agriculture courses offer a unique opportunity for learners interested in addressing food insecurity at the local level. This curriculum (referred to as ‘The Food Club Challenge’) offers educators an example of content that synthesizes experiential learning opportunities, technical agricultural skills and entrepreneurship education. Students of this curriculum produce and donate agricultural products to local food collection centers while developing a business plan and practicing employability skills. This project was developed and delivered in Mason County, Michigan for second year students enrolled in a Career and Technical Education AgriScience course; however, it can be adapted to multiple different learning environments
