Sahin, Huseyin/0000-0002-6018-1494WOS: 000352800000003The purpose of this study was to evaluate the total phenolic contents, antioxidant properties and phenolic composition of four edible mushroom species, Ganoderma lucidum, Morchella esculenta, Lentinula edodes and Hericium erinaceus. Extraction of phenolic compounds was carried out in an ultrasonic bath. Total phenolic contents were determined using Folin-Ciocalteu's reagent and the results were calculated using gallic acid equivalents (GAE). Ferric reducing antioxidant power and 2,2-diphenyl-1-picrylhydrazyl free radical-scavenging antioxidant activities were also measured and Trolox was used as positive control.
