The scarcity of water in the semiarid region undertakes the development of crops necessitating management resulting in better production and utilization of water resources. This study aimed to characterize the chemical and physical postharvest tomato fruits under irrigation in phenological phases. We used the statistical design in randomized blocks with four blades (60, 80, 100 (control) and 120% of actual evapotranspiration - ETr), distributed in four blocks with one plant per plot, being rated at 112 days after transplanting, the ascorbic acid or vitamin C, palatability, longitudinal and transverse diameter, flesh thickness, number of locules and weight of fruits per plant.
