Saccharomyces cerevisiae is a yeast broadly used in the fermentation and pharmaceutical industry for beverages, food and probiotic supplements production. Its natural ecological niche is the oak trees. However, is frequently found in anthropogenic environments like vineyard and bakeries. Within the S. cerevisiae species is possible to distinguish between wild or domesticated populations. This last type has acquired genomic and phenotypic traits due to the selective pressure imposed by human’s environments. However, S. cerevisiae have the ability to colonize niches like the gastrointestinal, respiratory and vaginal systems, and it can cause infections as an opportunistic agent.
