Bachelor thesis is called manufacture of ice cream. In the introduction, ice creams defined in terms of composition, production, nutritional value. The aim was to focus on the individual components and their alternatives, including raw materials containing bioactive substances that may be beneficial to human health. The second section discusses the individual steps of production. Another section explores the range of products on the Czech market in some retail chains. Includes ice cream distribution into characteristic legislative categories according to the fat content, dry matter and markings on packaging. The last chapter contains a practical part of manufacture ice cream lemon sorbet followed by sensory evaluation
