The tomato is considered one of the most important fruits for their high volume production and demand worldwide. The consumer demand in its organoleptic characteristics requires a detailed study to establish a protocol for sensory analysis and be able to carry out studies of efficient breeding to satisfy consumers. It is a fruit that presents great variability between genotypes of the same variety and different chemical composition in different structures, mainly gel-pericarp, a fact confirmed in another study.
