In a minimally processed product made from vegetables, the microbial growth is directly influenced by the microbiota from the raw feedstock collected and the processing conditions. Its commercialization is regulated by the Spanish law. Despite that, nowadays the use of sanitizing treatments with chlorate derivatives is widespread. Physical treatments like ultrasound can be an alternative to avoid the use of chemical products.
