ABSTRAK The inhibition ability of betle leaf extract against the growth of spoilage bacteria (Pseudomonas fluorescens) on fish had been studied. The objectives of this research were (1) to analyze compounds of betle leaf extracted by ethanol, diethyl ether, hexane,using GC-MS, (2) to determine antibacterial activity of four kinds betle leaf extract, (3) and to use betle extracts for fish preservation. The betle leaf extracts consisted of several compounds as analysed by GC-MS. The major components were 4-allyl-l,2- diacetoxy benzene and benzoic acid derivats such as 2,4-dimethyl,benzoic acid and 3,5-dimethyl, benzoic acid.
