Glucanases are enzymes that function to break down a glucan, a polysaccharide made of several glucose subunits. As they perform hydrolysis of the glucosidic bond, they are hydrolases and classified as glycoside hydrolases EC.3.2 in the EC number classification of enzymes. Glycoside hydrolases are a well-known group of enzymes. Their functions are to hydrolyse the glycosidic bond between a carbohydrate and non-carbohydrate moiety or between 2 or more carbohydrates.
