The objective of this study was to evaluate the hygienic conditions of establishments and manipulators that market pork in free markets, of eight municipalities in the Brejo Paraibano Microregion: Alagoa Grande, Alagoa Nova, Areia, Bananeiras, Borborema, Matinhas, Pilões and Serraria. The research was carried out during the months of May to September 2017, where weekly visits were made to establishments on the days of the fairs. The data were collected through observations and application of semi - structured questionnaires consisting of 35 questions that dealt with aspects related to the conditions of handling, storage, conservation, hygiene of the facilities, hygiene of the manipulators and utensils used in the pork marketing process.
