As you know, meat is the most consumed protein source by households and depending on the hygienic and sanitary conditions it is obtained, transported, displayed and marketed, it loses its physical and chemical characteristics very quickly. The present study aimed to determine the sanitary conditions of the stalls that sell meat, as well as the hygienic conditions of food handlers in the city of João Pessoa, PB. Interviews with 121 vendors applying a questionnaire were performed. All these data were analyzed mainly from the perspective of Resolution RDC n. 216 of September 15, 2004.
