The Jabuticaba is a fruit widely consumed, mainly due to its peculiar organoleptic characteristics. The pulp is rich in sugars and minerals, besides presenting high moisture content. The epidermis present high nutritional value, but is normally discarded. The goal of this work was to develop the drying kinetics of skin jabuticaba, as well to characterize the physical properties of the fruit and the chemistry of pulp, skin and co-product obtained.
