Shiitake, Lentinula edodes, is an Asian mushroom which is now produced in Western countries thanks to new cultivation methods. One of the major limitation of the cultivation method on pasteurised wheat straw used in France and other European countries is the growth of antagonistic fungi, Trichoderma spp., in the cultivation substrate. By taking into account findings on the interactions between L. edodes and Trichoderma spp., two improvements in the cultivation method were tested: substrate supplementation with peat and the use of a new support of activated inoculum.
