L'hydratation du lysozyme (blanc d'oeuf de poule) en solution (pH 4.7) été étudiée grâce à la mesure du coefficient de self diffusion de l'eau par la technique RMN des échos de spin et grâce aux relaxations Kerr-diélectrique par des méthodes impulsionnelles. Par RMN on dénombre 110 ± 15 molécules d'eau qui correspondent à l'eau fortement structurée à la surface de la protéine par liaisons hydrogène eau-protéine.
