Preservation And Processing Of Tropical And Subtropical Fruits

This chapter discusses the preservation processes commonly or potentially applied to tropical and subtropical fruit products. The chapter first discusses the agents and factors responsible for the deterioration of fruit products and biological hazards to health. It then presents the principles behind conventional technologies and provides examples of their application to tropical and subtropical products. Finally, the chapter discusses the most promising emerging technologies for the preservation of tropical and subtropical fruit products. © 2011 Woodhead Publishing Limited.
