Se discuten los desarrollos científicos y tecnológicos alcanzados en la cadena de la carne. En este enfoque se consideran todas las características que hacen a la calidad de la carne. Se observa que gran parte de aquellos desarrollos tecnológicos favorecieron la producción primaria, afectando en muchos casos al medio ambiente y a aspectos éticos. En cuanto a los avances alcanzados se analizan lo correspondiente a la materia prima y los aspectos tecnológicos ligados a la faena de los animales llegando hasta el envasado.
