Cassava is a plane that is available right and left in Indonesia. This is because of suitable criteria of the soil and climate conditions in Indonesia for cassava plants. In Indonesia, cassava have been processed in the form of dried cassava, snack of steamed grated cassava with palm sugar, tapioca flour, and cassava flour. Manufacture of cassava flour is aimed to extend the storage of cassava and reduce importing of wheat flour. One of the stages in the processing of cassava flour is drying.
