ANALISIS PROSES PENGERINGAN PARUTAN KETELA POHON DENGAN MENGGUNAKAN FLASH DRYER YANG DILENGKAPI DENGAN SPINNER HORIZONTAL PADA BAGIAN PENGUMPANAN

Cassava is a plane that is available right and left in Indonesia. This is because of suitable criteria of the soil and climate conditions in Indonesia for cassava plants. In Indonesia, cassava have been processed in the form of dried cassava, snack of steamed grated cassava with palm sugar, tapioca flour, and cassava flour. Manufacture of cassava flour is aimed to extend the storage of cassava and reduce importing of wheat flour. One of the stages in the processing of cassava flour is drying. In this research, cassava drying is done by using a flash dryer modified by adding a horizontal spinner, because the performance of the flash dryer in the laboratory of Faculty of Agriculture Technology, Gadjah Mada University, is not optimal. The general objective of this research is to see the effectiveness of the addition of a horizontal spinner of the performance of flash dryer machine. In preparation process of cassava flour, cassava is peeled and cleaned before shredding. Further, wet shredded cassava is squeezed to reduce the water content. The research is conducted by using 2 variable varied and combined to produce 12 treatments, they are 4 treatments RPM varied with 3 initial water content. The research is conducted by using 2 times, and each variation is 3 done cycles to get 10% water content. Before drying, sample was measured by using thermoravimetri method to know water content. After that, sample of each cycle is also measured to know the water content. During the cycle, temperature data collected (ambient temperature and in the flash dryer), air humidity by time interval 5 minutes for once. Data of water content reduction is used to know the drying constants. The results of the research find out that the cycle needed in the drying process after the addition of horizontal spinner is 3 cycles, and the time required in each cycle is faster. The efficiency value of the drying and heating of 950 RPM variation with water content of 50-52% is the best variation for being used with drying efficiency 20,02% and heating efficiency 64,19%. The faster RPM is used, the less time is needed to dry the material. The initial water content recommended in the drying is 50-52% with the 950 RP
