This study aims to create a encapsul powder of liquid smoke with maltodextrin and to determine the physical and chemical properties of liquid smoke powder. Liquid smoke is made from coconut shell that burned in pirolisator with a temperature of 400 � C for 3 hours and was redistilled 2 times.
