The potential applications of gelatine from O.mossambicus skin as a component for edible films was recently observed. The observation leads to the modifications to improve the mechanical properties and inhibition properties of the edible film. One of modification was the addition of cross linking agent. Seaweed extract (K.alvarezii) containing phenol compounds, oxidised phenolic compounds will be converted into quinone, quinone is expected to act as a cross linking agent.
