Visible and near-infrared reflectance spectroscopy (VIS/NIRS) was used to predict colour on pork muscle samples. Colour values were measured on 44 pork muscles (n = 44) using a Minolta digital camera to determine CIE L* (lightness), CIE a* (redness) and CIE b* (yellowness). Samples were scanned in the visible and near-infrared region of the spectra on a monochromator instrument (400-2500 nm) on both intact and homogenised presentation to the instrument.
