Systems that objectively assess beef carcasses are becoming more common in slaughterhouses. The objectives of this study were to investigate differences in the EUROP classification of beef carcasses between independent national senior assessors and abattoir assessors, and to investigate the results of calibration and validation tests for the German VBS 2000 system in Poland.
