In a three part series, we set out to summarize the data available from various research efforts into the bioactive components resulting from milk protein hydrolysis. Milk contains within itself as an original package a cache of bioactive substances that derive from its secretion. Advances in molecular understanding of processes and enzyme technology have provided new insights into products of milk protein hydrolysis, both by the enzymes and during processing. These products of food digestion and enzyme hydrolysis and processing have been shown to have antimicrobial, immunopotentiating, opioid, Angiotensin Converting-I-Enzyme inhibitory activities as well as some antithrombotic peptides.
