In a conventional cassava starch is converted into dextrins using liquefaction enzymes at high temperatures(90–120°C) during a liquefaction step. Dextrins are hydrolyzed into sugars using saccharification enzymesduring a simultaneous saccharification and fermentation (SSF) step.
