Broccoli (Brassica oleracea L. var. Italica) is recognized as a very nutritious food due to its high content of health promoting compounds, such as ascorbic acid, phenolic compounds and its antioxidant capacity. The food industry is increasingly in favor of less processed products, which require food safety but at the same time maintain adequate organoleptic characteristics, using technologies that can replace the heat treatment an alternative could be the application of ultrasound.
