Coconut milk cream is an emulsion in the form of thick and white appearance. One of the alternatives in food preser- vation is irradiation. The irradiation inhibits the growth of bacteria, mold and yeast. The aim of this research was to find out the effect of UV irradiation and storage time on microbe and rancidity properties of coconut milk cream. This research contained two factors of treatment. The first was length of irradiation varying 5 different time 0, 10, 20, 40,60, and 80 seconds. The second factor was storage time, 0, 2, 4, and 6 days. Data acquired in this research were shown in graphic form and discussed descriptively.
