The objective of this research was to investigate phenolic content and antioxidant activity of fresh and blanched white saffron, and to determine the correlation between antioxidant activity and phenolic content. The phenolics analyzed consisted of total phenol, total flavonoid, and condensed tannins with standards gallic acid, quercetin, and catechin, respectively. Antioxidant activities were determined using 2,2-diphenyl-1-picrylhydrazyl (DPPH) free radical scaveng- ing and ferric reducing antioxidant power (FRAP).
