Penelitian mengenai karakterisasi dan skrining fitokimia infusa kulit buah nanas(Ananas comosus (L.) Merr.) pada variasi usia kematangan buah telah dilakukan.Infusa dibuat dengan kulit buah nanas pada variasi usia kematangan Level 1 (3bulan), Level 3 (4-5 bulan) dan Level 5 (5-6 bulan). Hasil infusa masing-masingdilakukan freeze-drying dan diperoleh bentuk serbuk. Hasil parameter spesifikmenunjukkan warna coklat, rasa asam, serta berbau khas, dengan kandungansenyawa larut dalam air masing-masing sebesar 82,27%, 82,43% dan 85,52%untuk Level 1, 3 dan 5.
