Conventional thermal pasteurisation is more preferable by juice processor in microorganism inactivation due to its effectiveness but results in nutritional and quality degradation. Due to that, the alternative non-thermal technology of ultravioletirradiation (UV-C) gaining interest to minimise the stated effects.
