Bu araştırmada Lital ve Yedikule Tipi marulların +2°C ve +4°C'ye Ayşekadın ve Rodop tipi taze fasulyenin +8°C'ye önsoğutmalarının, normal depolama sonunda ürünlerdeki kimyasal ve fiziksel parametreler (Ağırlık kaybık net ağırlık, titre edilebilir asit, pH, suda eriyebilirlik, kuru madde, renk değişimi, soğuma zamanı ve dereceleri) üzerine yaptıkları etkiler araştırılmıştır.
