La cocina, su espacio físico y prácticas cotidianas. Experiencias desde una comunidad rural de la huasteca potosina, México

Over time, the concept of cuisine has been used interchangeably to refer to gastronomy; this intimate relationship is reflected in the numerous writings on which subjects are dealt with on man and food, however, they do not always stop to speak of the physical space in which the transformation of what is later to be tasted is carried out. As a main objective, this document aims to bring the reader to the experience of the task in rural cooking, through the testimony of those interviewed who shared the history of how they started in the art of cooking, their daily practices, forms of administration, etc. It is interesting how a cooking talk gave a glimpse of more personal moments of the participants, such as the one in which, between laughter, revealed the disagreement about the role they have to play as women. As a primary part of the paper, it has been tried to provide enough elements to guide the reader to analysis and reflection, in this way presenting topics that address the relationship between man and food, the historical evolution of cuisine, as well as the context in which the protagonists of this work are located. To carry out the research work, a methodology was followed which included an exhaustive documentary analysis that allowed to establish the theoretical framework. At this point it is essential to clarify that the subject studied corresponds to rural cooking today, therefore, has not been addressed what, for some authors, is better known as "traditional cuisine", because of the fact that there are already documents that have been in charge of valorizing and disseminating it. In light of this clarification, the reader will understand that the scarcity of information on rural cooking, under the approach proposed - from the physical space and seen from the current time - generated a certain degree of difficulty especially in the section of evolution of the kitchen, so that the research proposes starting from a common history, opening spaces through the reading in which is reflected on specific manifestations of rural cooking over time. In addition to this, and what could be considered as the main contribution of our work, we present the testimonies derived from the interviews, thus participating in the documentation of the reality of the objective topic. As final results were obtained a series of conclusions - derived from the analysis of the theory and its comparison with reality - that allow to understand aspects such as the presence of a rural kitchen from pre-Hispanic times; the role of women, through the history of Mexico, as a backbone in the kitchen; the presence of elements - both objective and subjective - that differentiates rural cuisine from traditional as well as the quality of rural cooking to convert the resources of the natural environment in which it is immersed, in food.A través del tiempo, el concepto de cocina se ha utilizado indistintamente para hacer alusión a la gastronomía; esta íntima relación se ve reflejada en los numerosos escritos en los cuáles se tratan temas sobre el hombre y los alimentos, sin embargo, no siempre se detienen a hablar del espacio físico en el cual se lleva a cabo la transformación de lo que posteriormente será degustado. Como objetivo principal, el presente documento pretende acercar al lector a la experiencia del quehacer en la cocina rural, a través del testimonio de las entrevistadas quiénes han compartido la historia de cómo se iniciaron en el arte de cocinar, sus prácticas diarias, formas de administración, etc. Resulta interesante cómo una plática de cocina dejó entrever momentos más personales de las participantes, como ése en el que, disfrazado entre risas, se desvelaba la inconformidad sobre el papel que les toca desempeñar como mujeres. Como parte primordial del escrito se ha procurado dotar de suficientes elementos para poder encaminar al lector al análisis y la reflexión, de esta manera se presentan temas que abordan la relación del hombre con los alimentos, la evolución histórica de la cocina, así como el contexto en el cual se ubican las protagonistas de este trabajo. Para la realización del trabajo de investigación, se siguió una metodología que incluyó un exhaustivo análisis documental que permitiera establecer el marco teórico. En este punto se vuelve imprescindible aclarar que el tema estudiado corresponde a la cocina rural en la actualidad, por lo tanto no se ha abordado lo que, para algunos autores, es mejor conocida como “cocina tradicional”, por el hecho que sobre ésta última existe ya documentos que se han encargado de valorizarla y difundirla. Ante esta aclaración, el lector entenderá que la escasez de información sobre la cocina rural, bajo el enfoque que se propone -desde el espacio físico y visto desde la época actual- generó cierto grado de dificultad sobre todo en el apartado de evolución de la cocina, por lo que la investigación propone partir de una historia común, abriendo espacios a través de la lectura en los que se reflexiona sobre manifestaciones puntuales de cocina rural a través del tiempo. Aunado a esto, y lo que se podría considerar como aporte principal de nuestro trabajo, se presentan los testimonios derivados de las entrevistas, participando así de la documentación de la realidad del tema objetivo. Como resultados finales se obtuvieron una serie de conclusiones -derivadas del análisis de la teoría y su comparación con la realidad- que permiten entender aspectos como la presencia de una cocina rural desde tiempos prehispánicos; el papel de la mujer, a través de la historia de México, como columna vertebral en la cocina; la presencia de elementos -tanto objetivos como subjetivos- que diferencia la cocina rural de la tradicional así como la cualidad de la cocina rural de convertir los recursos del medio natural en el que se encuentra inmerso, en alimentos
