Droplet microfluidics offers tremendous applications and prospects in many scientific and industrial fields (mainly in biotechnology). The technology enables for the fabrication and manipulation of millions of highly monodisperse microdroplets, each of which may be regarded as an independent micro-reactor. Droplets may be produced, monitored, and manipulated at kHz rates, using mainly optical (optofluidics) methods. Numerous studies have been conducted to improve the technology but a thorough understanding of the complex fundamental dynamical processes occurring at the droplets interface are still not well understood.
