Bu araştırmada, beyaz peynirler biri kontrol olmak üzere %0.03, %0.05 ve %0.07 sorbik asit ve %0.03, %0.05 ve %0.07 K-sorbat katkılı 7 farklı salamurada 90 gün süresince olgunlaştırılmıştır. İki tekerrürlü olarak yürütülen çalışmada toplam 56 örnek üzerinde çalışılmıştır. Beyaz peynir örneklerinde olgunlaşmanın 2., 30., 60. ve 90. günlerinde mikrobiyolojik ve kimyasal analizleri yapılmıştır.
