Saf Saccharomyces cerevisiae ve Lachancea thermotolerans ve Saccharomycess cerevisiae’nin karışık kültürleriyle gerçekleştirilen fermantasyonlarda yoğunluk daha hızlı azalmıştır. Lachancea thermotolerans fermantasyon ortamında fazla sayıda kalmıştır. Ardışık kültürlerde Saccharomyces cerevisiae mayası ortama ilave edildikten sonra fermantasyon ortamına hakim olmuştur. Örneklerde etil alkol miktarı %10.76 ile 11.62 (h/h) arasında değişmiştir....
