Balların nem oranı %9,89-%15,30, toplam kuru madde miktarı %84,69-%90,10, suda çözünür kuru madde miktarı %79,05-%84,85, pH değeri 3,37-4,19, titrasyon asitliği değeri 8,17-13,59 meq/kg, renk yoğunluğu (L, a, b) 24,74-64,26; -2,53-32,64; 13,97-67,41, su aktivitesi 0,55-0,62 ve HMF miktarı 2,01-73,59 mg/kg arasında değişmiştir.
