In vine cultivation, the use of by-products is an important factor for sustainable production. One of these by-products is the grape that comes from the thinning of clusters in red grapes, which is normally discarded. In this work we have studied the use of the thinning grape as a substrate for obtaining extracts rich in polyphenols (stilbenes). These compounds have multiple applications: natural preservatives, antifungals, nutraceuticals and cosmetics. UV-C light has been used to induce the synthesis of a greater amount of compounds in the grapes from thinning of a series of red varieties: Tempranillo, Syrah, Tanat, Marselan and Zinfandel, so that they can be obtained from the skin of that treated grape, extracts richer in stilbenes.
