Revalorization of thinning cluster grapes to produce stilbene enriched extracts

In vine cultivation, the use of by-products is an important factor for sustainable production. One of these by-products is the grape that comes from the thinning of clusters in red grapes, which is normally discarded. In this work we have studied the use of the thinning grape as a substrate for obtaining extracts rich in polyphenols (stilbenes). These compounds have multiple applications: natural preservatives, antifungals, nutraceuticals and cosmetics. UV-C light has been used to induce the synthesis of a greater amount of compounds in the grapes from thinning of a series of red varieties: Tempranillo, Syrah, Tanat, Marselan and Zinfandel, so that they can be obtained from the skin of that treated grape, extracts richer in stilbenes. The results show an effective increase in stilbenes, especially trans-resveratrol and viniferins. The variety that most increases its content in these compounds is Marselan, followed by Zinfandel, Syrah, Tanat and Tempranillo.   En el cultivo de la vid, el aprovechamiento de subproductos es un factor importante para una producción sostenible. Uno de estos subproductos es la uva procedende del aclareo de racimos en uva tinta, que normalmente se deshecha. En este trabajo se ha estudiado el aprovechamiento de la uva de aclareo como sustrato para la obtención de extractos ricos en polifenoles (estilbenos). Estos compuestos tienen múltiples aplicaciones: conservantes naturales, antifúngicos, nutraceúticos y cosméticos. Se ha utilizado la luz UV-C para inducir la síntesis de una mayor cantidad de compuestos en la uva procedente de aclareo de una serie de variedades tintas: Tempranillo, Syrah, Tanat, Marselan y Zinfandel, de forma que se puedan obtener a partir de la piel de esa uva tratada, extractos más ricos en estilbenos. Los resultados muestran un aumento efectivo de estilbenos, sobre todo de trans-resveratrol y viniferinas.  La variedad que más aumenta su contenido en estos compuestos es la Marselan, seguida de Zinfandel, Syrah, Tanat y Tempranillo.
