Die Reife der Apfelfrucht wird durch Ethylen, einem Reifungshormon, initiiert und der Reifebeginn ist durch einen Anstieg der fruchteigenen Ethylenproduktion gekennzeichnet. Während der Reife nimmt u.a. die Fruchtfleischfestigkeit ab, die eines der wichtigsten Qualitätsparameter für den Konsumenten und den Handel ist. Die Abnahme der Fruchtfleischfestigkeit des Apfels nach der Ernte verläuft dreiphasig, wobei die erste Phase, bei der es noch nicht zu einem signifikantem Festigkeitsabbau kommt, die wichtigste ist. Die Länge der ersten Phase unterscheidet sich in den Apfelsorten, dabei haben schnell weichwerdende Sorten eine kurze und lange festbleibende Sorten eine lange erste Phase.
