Bu çalışmada, Türkiye'de yetiştirilen hindiba çeşitlerinin (Cichorium spp.) toplam fenolik madde, antosiyanin, antioksidan kapasite ve biyoalınabiliklerindeki değişimler araştırılmıştır. Hindiba çeşitlerinde toplam on dokuz fenolik standart taranmış ve en yoğun fenolik asitlerin sırasıyla şiringik asit (2.54 mg/kg) ve trans-ferulik asit (1.85 mg/kg) olduğu, kateşinin de ana flavanol bileşik olduğu bulunmuştur. En yüksek flavanol içeriği yeşil hindiba örneklerinde (0.62 mg / kg) belirlenmiştir. Kırmızı hindiba çeşidi, diğer çeşitlerden daha yüksek antosiyanin (12.80 mg / kg), ekstrakte edilebilir (8855.50 mg GAE / 100g) ve hidrolize edilebilir (7005.51 mg GAE / 100g) toplam fenol özelliği göstermiştir.
