Abiotic stresses have been known to induce the production of secondary metabolites in plants as part of the defense mechanism systems. Many of these compounds were reported to have bioactive properties, such as antioxidant, antimutagenic, antimicrobial, or anticarcinogenic. By using these stresses as tools, it is possible to develop strategies to produce fruits and vegetables with higher health promoting compounds. We determined that wounding and UV radiation caused total phenolics, antioxidant capacity (AOX), and PAL enzyme activity to increase significantly.
